The Perfect Go-To Breakfast: Overnight Oats

For the past 4 months, I have watched my roommate religiously prepare “overnight oats” for her breakfast of choice. Recently, I made my own and quickly realized why she’s so dedicated to this yogurt based meal – its DELISH and prepped right, super healthy/filling!

The frozen berries (which will melt overnight) take on more of a jam-like consistency once melted.

There are endless recipes and ingredients for overnight oats, but essentially consists of 3 simple ingredients: 1/2 cup steel cut oats, 1/2 cup unsweetened almond milk and 3/4 cup non-fat greek yogurt. Alexis and I both prefer Siggi’s yogurt – because its very low sugar and super high protein compared to other varieties. Mix in some fruit (frozen fruit works just fine), a drizzle of honey, and a tablespoon of chia seeds – let it sit anywhere from 2 hours to overnight and enjoy this muesli-like breakfast!

(I also love adding in almonds, almond butter, peanut butter, cacao nibs – whatever I have on hand!)

Overnight oats with chocolate chia seed pudding

This version I made with unsweetened coconut flakes, blueberries, almonds as well as chocolate chia-seed pudding.

This is the easiest on-the-go recipe to make! I also have come into the habit of making it the morning and bringing it with me to work. By the time I workout and commute to my office, the oats have softened and its ready to eat! Plus, the thawing fruit keeps it nice and cold during that time – no chance of the yogurt going bad within that 2 hour timeframe.
