Sweet Potato Chili

SweetPotatoChili_prep2Halloween is one of my favorite times of year. I have always loved the feeling of chilly weather, a dark evening of trick-or-treaters, and endless scary movies available On Demand. In honor of the holiday, I decided to switch up my regular chili recipe, and opt to try a version with pumpkin in it. However, I wasn’t paying close attention at the grocery store and instead of grabbing a can of pumpkin – I accidentally grabbed a can of organic sweet potato. I made the chili anyway, and the result was super delicious!

This recipe is perfect for anyone who wants to make something healthy, filling, and EASY (10 min prep, 30 min simmer)! Make sure you have leftovers because chili is even better the second day.

  •  1 lb ground turkey
  • 1 can diced tomatoes
  • 1 can kidney beans
  • 1 yellow bell pepper
  • 1 onion
  • 1 can of pureed pumpkin or sweet potato
  • 2 jalapeños
  • 1 cup water
  • approx. 1 teaspoon cumin
  • approx. 1/2 teaspoon salt
  • approx. 1/2 teaspoon pepper
  • approx. 1 teaspoon cinnamon
  • approx. 1 teaspoon crushed chile pepper

Dice bell pepper, jalapeños and onion – sauté for 5 min until soft.  Add in turkey and cook until it begins to turn brown. Go ahead and add in water, tomatoes, beans, pumpkin or sweet potato, spices and bring to a simmer. Let the recipe simmer for 30 minutes. That’s all!

Enjoy this meal with some cheese, avocado and tortilla or pita chips!
